Nori infused The Botanist, dill & fennel syrup paired with East Imperial Grapefruit Tonic Water.
An iconic kiwi tonic paired with a Scottish Gin which share many similarities in natural beauty between their homelands. Both with strong ties to the land, fresh, natural ingredients as well as oceanic influences. Tahuaroa (ocean) is a powerful force in the cultures of both NZ & Islay.
With this in mind and a nod to the kiwi beaches and the seaside distillery I have infused The Botanist with nori for a savoury, umami twist and added aromatic dill & fennel to complement the locally foraged Islay botanicals. The East Imperial grapefruit tonic then balances with a subtle sweetness and citrus kick.
