We were inspired by classic Italian aperitifs and our own legendary aperitivo hour at Non Solo Pizza Parnell! In the cocktail is equal parts of Blush Rhubarb Gin, Italicus and Cocchi Rosa, served in a wine glass filled with ice and topped up with East Imperial Yuzu Tonic. We’ve named it the Rabarbaro Spritz because it is a blend of the most famous cocktail from Italy, the Aperol spritz and an amazing Blush gin and tonic.
