Islay Lemonade

  • The Botanist Gin
  • East Imperial Yuzu Lemonade
  • Mint & Thyme Syrup
  • Peated Whisky
  • Garnish: Orange & Mint

This cocktail reflects this philosophy in the way that we use locally grown herbs and fruits to bring out the distinctive Islay style with new-world flavours. The city of Christchurch, or Otuatahi, is largely a flat landscape, with the beauty of the Port Hills reaching around the coastline. Our modern cityscape boasts many wide-open spaces inside our city center, with veggie gardens and flowers abundant. We have hand-foraged for the mint, thyme & orange peel used in the house-made shrub. These ingredients enhance the subtle Scottish herbals found in The Botanist. The East imperial Yuzu Lemonade pulls all the herbaceous notes and zesty citrus together to create a refreshing drink representative of both Scotland and New Zealand.
