Kaiser Brew Garden

Rifters is a very herbaceous gin so I really leant into this. Using Rosemary and Thyme, really earthy herbs, to create an Eastside variation. I toned down the lime juice so as to not over power the herbs. So you get a bit of lime on the front and it fades into rosemary and thyme on the finish. I topped with the Yuzu Tonic as this gives a bit more of a subtle limeyness to the drink and the bitterness of the tonic works really well with the earthyness on the herbs and the gin.
