We broke down Simon Ford’s gin and with its 15 hour copper distils this juniper forward gin with light jasmine notes on your back palate worked well when we elevated these notes of jasmine with a jasmine liquor and East Imperial’s Yuzu tonic to balance it together with a note of citrus topping it off with an egg white and raspberry leaf foam using the whole plant. The vines/leaf add an earthiness to the drink. An aromatic spray Garnish that enlightened other senses.
